This easy as Banana bread using discarded sourdough starter will quickly become a family favourite as it has done in our house. It can be eaten fresh with a good lashing of butter spread on it or toasted with an array of toppings. The chopped walnuts can be swapped out for almonds. It can be eaten un-iced as we usually do or with a delicious cream cheese icing.
Banana bread can be pre-made and frozen for eating at a later date. Make it easy and slice it up before freezing, then pop it into the toaster for breakfast, after school snack or have it as a decadent dessert.
It is a dense, moist loaf that is easy to slice up once cooled. It’s a great way to use up those bananas from the fruit bowl that nobody wants to eat because they are too ripe. Sometimes I throw these in the freezer and save them up till there is enough to make this loaf. They don’t take long to defrost and it saves wasting them. I dislike food waste. It is a pet hate of mine. So this is my go to.
Makes 1 regular size loaf of Sourdough discard Banana Nut Bread
Ingredients
125gm butter
1/2 cup caster sugar ( I just use regular sugar)
1 egg
4 medium ripe bananas mashed ( I use pre frozen bananas)
1 & 1/2 cups all purpose flour
1/2 cup of sourdough starter discard (can be fed or unfed discard)
1 teaspoon Baking Powder
1 Teaspoon Baking Soda
1/2 Teaspoon Salt
1/2 cup chopped walnuts/almonds (optional)
Pre heat oven to 180 degrees celcius or 170 fan bake
Method
Beat butter and sugar together until creamy.
Add in egg and mashed banana. Beat well.
Add Sourdough starter discard and mix.
Add sifted dry ingredients into the wet mixture by folding dry through the wet mixture. Do not over mix. Best done with a flat spatula or wooden spoon.
Bake Sourdough discard Banana Nut Bread for approx 50 mins. Test with a skewer/toothpick after 45 minutes and cook for 5 minutes extra at a time so as not to overcook the loaf. Cool slightly before turning out onto a cooling rack.
Once completely cooled the loaf can be iced with the following –
50 grams butter softened
75 grams of cream cheese
1 cup of icing sugar
1/4 cup of finely chopped walnuts ( optional)
Soften butter, add cream cheese and mix until combined
Add sifted icing sugar and mix altogether until smooth
Sprinkle chopped walnuts on top of loaf if using
This is how we had Soudough discard Banana Nut Bread on Sunday morning for breakfast. Topped with sliced banana, maple syrup and whipped cream. Delicious!!!
