What’s in your Coleslaw?
I often get asked. What’s in your Coleslaw? Its delicious!
The secret is in the dressing. We eat this Homemade Coleslaw regularly in our house. We have it in burgers, for dinner as a side, in rolls and sandwiches for lunch and in wraps and also as a side with curries in Winter.
I often make Homemade Coleslaw when we have a Barbeque. I use what we have on hand, varying it each time I make it . Obviously always starting with cabbage. It’s quick and easy and a great way to use up what’s in the fridge if there is odds and ends to use up. Once made it can last up to two days in a sealed container in the fridge. It is fresh, zingy and crunchy
Ingredients for Homemade Coleslaw
Approx 1/4 of a medium sized cabbage sliced finely (Use green or red, or both)
1/4 of a red onion chopped finely
1 medium carrot grated
1 spring onion finely sliced
1 fresh leaf of rainbow chard chopped finely (optional)
1-2 sticks of celery sliced thinly
2 spears fresh thin asparagus sliced finely (optional)
small bunch finely chopped parsley
1/4 chopped red or yellow capsicum (optional)
1 radish finely chopped
Place all ingredients into a bowl large enough to mix dressing through
Delicious Dressing
1 teaspoon Whole grain mustard
1 teaspoon Horseradish sauce
Juice of 1/2 a lemon
Approx 1/3 cup of mayonnaise (any brand you have)
Mix together and stir through the coleslaw. Serve straight away or put in fridge until later.
